Chef Eric Scholtes has worked for over 20 years in the culinary industry, including holding several Executive Chef positions.
In past lives, he was part owner of Dream Trucks of Austin, and at one point had his own computer repair business. In his free time, he has built low-income housing for bees displaced by climate change.
Chef Eric is especially passionate about technique when it comes to BBQ and tacos, which aren’t just cheap trailer food. He enjoys watching the progress students make through the block and from week to week.
