BOULDER, Colo., June 14, 2016 /PRNewswire/ — In an exciting venture for Auguste Escoffier School of Culinary Arts in Boulder, the culinary school has partnered with local business Follow The Ruel for a series of student-run pop up restaurants. The community space will serve as venue for a select number of students who will be invited to design and execute their own dinner.
Opened in May, Follow the Ruel is the final concept of longtime industry chef and restaurateur, Connie Ruel. The multi-use space will be used for a number of activities, mostly all revolving around Boulder’s culinary scene.
“Whether it is in the coffee cafe, a POP UP event, catering event, winemaker dinner, brewmaster dinner, distiller dinner or any of the many other things do at Follow the Ruel, it’s really all about bringing people together to enjoy food made with great ingredients and prepared with the soul,” Connie Ruel said. “My goal is to touch each person experiencing Follow the Ruel on some sort of visceral level that other venues just can’t reach.”
From her time working with the Boulder campus, Ruel said she recognized the benefit a setting like Follow The Ruel could have. The community space is as much a venture for her as a learning space for up-and-coming culinarians. The first Escoffier collaboration dinner took place May 16th with culinary arts graduate Christine Ardinger. More dinners are planned for June and July.
“It was a great experience that really pushed me as a young chef,” Ardinger said about the event. “Working with Connie provided me an opportunity to grow and learn…it was a perfect next step from culinary school.”
Connie Ruel is a longtime partner and instructor of Escoffier Schools. Working with the institution since 2012, she always observed that students could benefit from the challenge of a pop-up restaurant. When she decided to open Follow The Ruel, she already had the idea for the POP UP OP in the works.

The Auguste Escoffier Schools of Culinary Arts offer professional culinary arts programs based on the methods, principles and systems of Auguste Escoffier, the culinary icon and source of modern cuisine.
