Chef Curtis Cain is an accomplished chef, Award winning barbeque team leader and founder of Mexicue Catering-Texas. Since his graduation he has been building a successful catering business and winning barbeque competitions all over Texas.

“I started my catering business to combine the love of barbeque I learned from my father combined with my mother’s Mexican recipes. I call it Texas Barbeque with Mexican influences. At school I learned to prepare for running a business. They taught me how to create menus, to calculate how much food to prepare for 250 people, and the right equipment you need to use.”

“I had always wanted to be a chef and when I learned I could attend classes at night I enrolled right away. I worked during the day and learned my craft at night and that made all the difference. The chef instructors taught me the importance of mise en place, how to cut meat and, most important, how to prepare myself for a career”

“What would I advise aspiring chefs? There are many things you need to know before you can consider yourself a chef. Learn as much as you can and always keep learning. It is a lot of hard work, but if you have the dream,… then go for it.”
